Jan & Rien van den Wijngaard run this family business with a 100 year long history. They select a small scale dairy to make this specialty aged goat gouda. 

The technique involves working with traditional drainage pots where the curds and whey separate naturally, which is beneficial for the development of flavour and texture of the cheese.

The interior is alabaster white and has a smooth texture with a creamy mouth feel. Maturation over four months in their special caves results in a lingering, complex flavour that is sweet and salty with a soft goatiness, and hints of walnut and crème fraiche on the finish.
