The Jersey cows’ milk for this brie is sourced from a local dairy in the township of Charleston in the Adelaide Hills. Produced in three different sizes to suit every occasion, each cheese is covered in a velvety white mould that has mild earthy aromas which marry elegantly with the rich, creamy interior.

The flavour development of the Charleston is influenced by the co-existence of different moulds on its rind. As it ages, the Charleston may develop some brownish spots on the outer surface. This is a natural part of its maturation. When the cheese is ripe, it develops a creamy texture and rich complex ‘farmyard’ and mushroom characters.
