This soft cheese made is in the Piemonte region of Italy. Mixed milk cheeses are a speciality of this region. 

Here, cows’ milk provides body, goats’ milk adds lemony notes and the butteriness of ewes’ milk shows up in the long, lingering finish. The combination blends into a harmonious balance of flavours. 

Slightly ripened, this soft cheese has a generous amount of black truffle pieces mixed through the curd. It has a soft, pale rind, and lusciously fudgy, flavoursome interior which develops into a gooey, sticky ooze with a little age.
