Toma della Rocca is a traditional cheese made in the Piemonte region of Italy. Mixed milk cheeses are a speciality of this region. Here, cow's milk provides body, goat's milk adds lemony notes and sheep's milk shows up in the long, lingering finish. The combination blends into a harmonious balance of flavours. 

Toma Della Rocca has a wrinkled pale yellow rind which blooms with white-grey moulds. Under the white mould rind, there is a pale straw coloured interior which tends to be quite soft near the rind with a smooth textured centre.
