That's Amore Smoked Scamorza
That’s Amore Cheese is made using traditional techniques and locally sourced milk.
This cheese is stretched in the same way as many other fresh cheeses, but scamorza is then ripened for two weeks and therefore develops a texture that is firmer than fresh mozzarella. Smoked scamorza (affumicata) is made by smoking the cheese over flaming straw for around 10 to 15 minutes. This cheese is most often sliced or grated for cooking purposes.
