That's Amore Diavoletti

That’s Amore Cheese is made using traditional techniques and locally sourced milk. 

Diavoletti means ‘little devils’. This little cheese has a spicy heart. The provolina shaped smoked cheese has a centre of green olive filled with fiery red chilli. The stuffed olive is inserted into the stretched curd before it is tied in a knot at the top, giving its characteristic shape and special spicy flavour. This is then lightly smoked.

They can be eaten fresh, or grilled to enhance the flavour.
