Tarago River Cheese Company, a family owned and run company, was founded in 1982 by the Jensen and Johnson families. Located at Neerim South in Victoria’s Gippsland region next to the Tarago River, the dairy sources milk from its own herd of 400 Friesian Holstein cows that graze naturally on the surrounding hills. 

This mild, double cream blue is matured for 2 months under a wax coating after which time it is spiked, allowing air to enter the cheese’s interior and the oxygen-loving blue mould to proliferate. 

The texture is creamy and smooth and the flavour buttery and rich with mild stunning blue notes.
