Swiss Emmental
Emmental originated from the Emme valley in the canton of Berne, Switzerland. Unlike many cheese varieties, the denomination "Emmental" was not protected. Hence, Emmenthal of other origins, especially from France, is widely available.
This is a traditional cheese made from unpasteurised cow's milk cheese produced in central Switzerland. Emmental has characteristic walnut-sized holes created as a result of a complicated fermentation process.
The hard thin rind encases a supple, straw yellow interior. The aroma is delicately sweet and nutty with notes of fresh-cut hay. The flavour is very fruity but balanced with acidity.
