Rosso di Langa
The name translates as the red from the Langa, the region in Piemonte where this cheese has been created. Rosso di Langa provides a gentle introduction to the washed rind style of cheese.
It is a young bloomy rind cheese made from sheep and cow milk that is washed with only water and annatto, the plant-based colouring. Annatto produces the same rusty hue on the surface as the introduction of brevibacterium linens used in traditional washed rinds, but without the robust aroma.
The small, square Rosso di Langa has a supple, soft ivory interior with a few small eyes. The flavour is mild with mushroom aromas.
