Préféré de nos Montagnes is a modern version of an old cheese with a long history. During the Middle Ages, farmers in the Haute Savoie paid their taxes with part of their milk production. When tax collectors called, they only partially milked their cows, so as to lower their level of production and their taxes. After the tax officers had left, the farmers would go back and milk the cows again. The milk from the second milking was much richer and was used to make this beautiful washed rind cheese.
Préféré de nos Montagnes translates as ‘Favourite from our Mountains’. An elegant cheese, it has a moist, supple semi- soft interior, a creamy texture, delicate aromas, and a light hazelnut flavour, which intensifies to meaty characteristics as it ripens.
