Beppino Occelli began his involvement in the dairy sector in 1976. His creations and personal interpretations of traditional products are tied to his profound love for the region of his birth, the Langhe and the Alps.

Produced from a blend of 50% goat and 50% cow’s milk. This cheese is left to age for about a year and a half. The wheels are then wrapped in chestnut leaves for the final ripening which permeates to the paste enhancing a strong and exceptional flavour.

The result is a pale brown, crumbly paste that melts in the mouth. It is sweet and fruity, with a subtle nutty flavour imparted by the leaves.
