The Sartori family have been working with cheese in America for four generations. They have a very close relationship with their local dairies and are very proud of the quality of the milk delivered fresh to their premises in Wisconsin.

A Sartori original that combines the best of aged white cheddar and parmesan, this delicious cheese is named with deep affection for the Dolomite mountains that tower above the Sartori hometown of Valdastico, Italy.

Is it a cheddar that tastes like parmesan or the other way round? Either way, this is an easy cheese to fall in love with – a bold, fruity, tangy palate and a firm, crumbly texture with little crunchy crystals throughout.
