The Mons family has been maturing cheese for three generations and travel throughout France to find artisan cheese makers who work with the best milk and offer the best expressions of that milk in their cheese.

Vully Rouge is made at a dairy located by the lake of Morat in the canton of Fribourg. There, Schäfer Fromagerie first made this cheese in 1994.

At the end of production, the cheese is soaked in brine for 24 hours before being regularly washed with brine and pinot noir made from fruit grown on the slopes of Mount Vully. This continues several times a week during its 10 week cellar maturation.

The rind is a beautiful and eye-catching burnt orange, encasing an ivory to yellow intrior. It has a smooth, delicate texture. Its aromatic bouquet has a gently yeasty pungency complemented by the rich, savoury palate with notes of spice and toffee.
