Made in the La Mancha region in central Spain since the time of the Romans, this cheese is now produced in large modern co-operatives. The flavour however remains unchanged as the sheep are still producing the same rich, aromatic milk as they continue to graze on the shrubs and grasses of the Dahesa.

To qualify as an authentic Manchego cheese, milk must be sourced from sheep from La Mancha and the distinctive pattern on the waxed rind (originally a result of the cheese being wrapped in braided grass), must be visible.

This semi curado young Manchego is supple and moist. The flavour is grassy and buttery, with hints of hay and a gentle tangy note.
