Long Paddock cheese is an organic cows' milk cheesemaker based in Castlemaine, Victoria on Dja Dja Warrung country. Established by cheese tragics Ivan and Julie Larcher, Alison Lansley, Ann-Marie Monda and Carla Meurs, they are determined to see Australia's artisan cheese industry flourish.
An Australian natural-rinded blue cheese of substance & complexity with different layers of flavour and texture, not just a salty-blue hit. It is a distinctive-looking, small column of cheese, with orange/brown/blue natural rind, and a creamy-colour paste inside with subtle blue veins. The dense paste is buttery near the rind, but chalky and crumblier in the middle. Like Stilton, the curd is milled, allowing relatively mild blueing in a dense but slightly crumbly paste. Its flavour is a balanced meld of creamy and buttery, with gentle fruitiness and a little saltiness. Its blue mould delivers subtle spikes of flavour as it is eaten. Exhibits delicious complexity & length of flavour as the paste melts in the mouth.
