Kris Lloyd from Woodside Cheese set out to make a uniquely Australian cheese using native lemon myrtle and green ants from the Northern Territory and far-north Queensland, and South Australian goat milk. The result is something you will not find anywhere else in the world. It recently won a Super Gold Medal at the World Cheese Awards, taking 11th place from 3021 entries.

Green ants have a zingy, lemon-lime, sherbet-like flavour which perfectly compliments the citrus notes of the fresh goat cheese and the lemon myrtle.

This is a seasonal cheese at its peak from January to March.
