Denmark's most famous cheese, Havarti, was created by Hanne Nielsen, a cheese enthusiast who travelled in the middle of 19th century to learn and discover cheese making techniques from other cheese makers. On her return to Denmark she experimented, applying her own ideas and methods to the experiences she’d had, and created Havarti, named after the farm where it was first produced.
Havarti is a simple washed rind, semi-hard cheese that is mild and very creamy and is laced throughout with small to mid-sized holes. The taste is slightly sour as well as sweet. With age it can develop quite a strong flavour.
