Originally, smoked cheese in the Netherlands was made by smoking gouda slowly in ancient brick ovens over smouldering hickory chip embers. During this process it would melt and then be moulded into its characteristic sausage shape.

This modern incarnation is a processed semi hard cheese. It has an edible brown rind and a creamy yellow interior with a supple texture and mildly smoky flavour.
