Dutch Edam
Named after the town of Edam in the province of North Holland, edam is produced from skimmed or semi-skimmed cow’s milk. It is a pressed, semi-hard cheese that characteristically comes in the shape of ball covered with distinctive red wax.
Emitting a very mild aroma, the cheese is usually consumed young. The texture is elastic and supple and the flavour is mild and mellow, exhibiting slightly salty, grassy, savoury notes.
