Named after the Franche-Comté region, this is the most popular cheese eaten in France, with 40,000 tonnes produced per year. 

Fromagerie Rivoire select exclusively from small dairies of the Jura mountains. By tapping the surface of the cheese the Affineur is able to detect any cracks or faults in fermentation in the young wheels.

It then undergoes the traditional maturation for a minimum of 12 months. This takes place entirely in their own Jura cellars, using the expertise gained from five generations of affineurs, 

This cheese has buttery, roasted-nut aromas and a sweet, lightly grassy finish. It has flavours ranging from milky to nutty.
