Coal River Farm is a family run business in South-East Tasmania that encompasses a unique team of artisan cheesemakers, chocolatiers, chefs and horticulturists. Head Cheesemaker Tim Gadischke is passionate about combining his extensive experience in traditional cheese-making methods with a creative flair. The result is an exceptional range of hand-crafted cheeses made with top-quality Tasmanian ingredients. 

This is a classic washed rind cheese that begins as a white mould. After several weeks of being washed in a brine solution, develops a lovely orange rind and distinct pastoral, earthy aroma. While young the cheese is still mild, but as it ripens, it develops a stronger, more complex smoky flavour with a sweet finish.
