Head Cheesemaker Tim Gadischke is passionate about combining his extensive experience in traditional cheese-making methods with a creative flair. The result is an exceptional range of hand-crafted cheeses made with top-quality Tasmanian ingredients. 

This triple cream brie has a velvety white rind with a glistening interior. When young, it has a smooth, chalky centre and as it matures, the centre breaks down to a decadent, oozing consistency. The texture is creamy with a subtle, buttery finish.
