Coal River Farm is a family run business in South-East Tasmania that encompasses a unique team of artisan cheesemakers, chocolatiers, chefs and horticulturists. Head Cheesemaker Tim Gadischke is passionate about combining his extensive experience in traditional cheese-making methods with a creative flair. The result is an exceptional range of hand-crafted cheeses made with top-quality Tasmanian ingredients. 

When young, this camembert exhibits a gentle lactic tang and smooth, buttery paste. As it matures, it develops clean mushroom characteristics.
