Coal River Farm is a family run business in South-East Tasmania that encompasses a unique team of artisan cheesemakers, chocolatiers, chefs and horticulturists. Head Cheesemaker Tim Gadischke is passionate about combining his extensive experience in traditional cheese-making methods with a creative flair. The result is an exceptional range of hand-crafted cheeses made with top-quality Tasmanian ingredients. 

This brie contains a layer of ash in the centre as well as a coating on the outside, making it a striking addition to any cheese board. It has a mild aroma of mushrooms, while the ash adds an extra dimension to create an earthy, nutty finish.
