Originating in Cyprus, this cheese is traditionally made from sheep or goat milk or a combination of both. This particular Halloumi is blended with cow’s milk to boost the quantity produced.  It is made taking a lightly pressed, freshly made, unripened curd and cooking it in its own whey. When cool it is immersed in lightly salted brine.

Halloumi is all about texture and is one of the few cheeses that holds its shape when fried or grilled. The true character of halloumi is revealed then, when the outside becomes caramelised while the centre softens deliciously.
