Normandy in north eastern France is famous for many things, but camembert and apples are two of the most popular. The cider made from the apples is a great match for the full flavoured local white mould cheeses. Some of this is distilled to make eau de vie, which is then aged in barrel for a minimum of two years to create the distinctive apple brandy that is Calvados.

The classic brassica flavours of a Normandy camembert are complemented by the slightly sweet, fruity notes of the Calvados it has been infused with.
