This is from France’s most famous region for making goat cheese. 

There is a white velvety mould on the rind and a dry, slightly firm centre. As this cheese ripens, it becomes soft and creamy underneath the rind, while the centre remains slightly firm. The flavour is tangy and herbaceous with lovely citrus overtones. As this cheese matures, it deepens in pungency and flavour.
