The known history of Brie dates back to the Middle Ages and Ils portent le nom des villages ou ils sont produits ou vendus : Coulommiers, Meaux, Melun, Montereau, Chevru… many are named after the villages where they were originally produced and sold. The evolution of Brie has continued in the late nineteenth and early twentieth when the first artisanal dairies appeared.
Brie de Nangis is made in the classic brie style. Its biggest difference is its size. Made in a 1kg wheel it is slightly thicker than the traditionally larger brie wheels and as a result ripens more slowly. The cheese is matured until it develops a yeasty white rind with an interior that is rich and creamy.
The consistency of the interior remains even throughout and the flavour has characteristic earthy, mushroom flavours.
