Bra Duro is a hard cows’ milk cheese made with semi-skimmed milk. The cheese takes its name from the city of Bra. It acquired its name because the Braidesi, entrepreneurs bought it from the herdsmen of the Cuneo Valleys and matured it in their cellars. Duro is the Italian word for rough or rugged, which is used to describe the coarse outer rind. It is aged for a minimum of 6 months.
The cheese displays sharp, savoury, salty notes and can be used in various dishes.
