While working as a winemaker in Bordeaux, Victoria McClurg became so inspired by the nation's love for cheese and the tradition of cheese making that she returned to Australia determined to produce regional cheeses from the unique countryside of the Barossa Valley. In 2003, Victoria opened The Barossa Valley Cheese Company in the main street of Angaston.
Using fresh milk sourced daily from local dairies, they specialise in hand-making soft, white mould, washed rind and fresh cheese styles.
This small goat’s milk camembert style cheese is light and chalky when young, exhibiting characteristics of lemon and fresh hay. As it matures, the texture softens and becomes wonderfully silky while the flavour intensifies with notes of wild garlic.
