Arrigoni Formaggi was established in 1914 by Battista Arrigoni as a milk processing farm in the small town of Pagazzano in northern Italy. Today, the fourth generation proudly produces a variety of award-winning Italian cheeses.

Gorgonzola comes in two varieties, Dolce and Piccante. Dolce is a creamy, sweet version of the traditional Piccante. This Gorgonzola Dolce is made following traditional methods.

The cheese is creamy and sweet with blue-green veins throughout. The texture is soft and smooth with a creamy flavour that contrasts the slight tang and saltiness of blue. After four weeks of maturation, the wheels are pierced with spikes to allow air to enter, allowing the oxygen loving blue mould to grow. Once made, the cheeses are wrapped in foil to retain moisture.
