Created by Fromagerie Berthaut in Burgundy, France, Affidélice is a specialty cheese presented in a wooden box.

During its maturation, the cheese is repeatedly washed with Chablis, a white wine made from chardonnay grapes in the Burgundy region. This helps keep the rind moist to provide the environment preferred by the desired microflora. Their job is to ripen this cheese from the outside into the centre, until it becomes molten and when fully ripe. 

The rind starts out as a creamy orange colour that darkens to copper tones. Over this time the flavours develop a wonderfully pungent, fruity aroma and a rich, full flavour creating a unique culinary experience.
