Tarago Cheese Shadows of White

Tarago River Cheese Company, a family owned and run company, was founded in 1982 by the Jensen and Johnson families. Located at Neerim South in Victoria’s Gippsland region next to the Tarago River, the dairy sources milk from its own herd of 400 Friesian Holstein cows that graze naturally on the surrounding hills. Moondarra Cheese purchased Tarago in 2023 but continues with tradition. 

Shadows of White is an indulgent cheese - rich, creamy and luscious. When young, it has a slightly acidic, chalky centre which matures to a decadent creamy paste. A great crowd pleaser!
