Kym Masters from Section 28 in the Adelaide Hills is hand-making uniquely Australian cheese that acknowledges the terroir via the local milk. After spending time in France and Italy studying mountain style cheese, he launched his first cheese in October 2015.

He continues to expand his range and the latest addition is Monte Rosso, inspired by the Italian Taleggio. It is a semi-soft cheese that has been washed in brine to develop an aromatic, yeasty orange rind. 

It has a smooth, buttery paste, with a funky aroma, delicate fruity flavour and lingering lactic finish.
