Caseificio Gennari was founded in 1953 in Collecchio by Sergio and Maria Gennari. Initially the company produced 3 cheese wheels per day. The company has now expanded to a warehouse housing approximately 35,000 wheels of cheese and a modern farm for milk production.

When Paolo Gennari was asked to make a small Parmigiano Reggiano wheel, he replied that according to the regulations, it must weigh at least 38kg. But they did not believe him and said that he did not know how to make it. That was the day the Oro Nero cheese was created. Milk is used from their farm; it is left as whole milk thus rich and creamy. The wheels are 10-12 kg and are aged for 6-9 months. It has a sweet, soft flavour on the palate. The truffle is dispersed throughout the curd and the flavour shines through the richness of the cheese.
